When we lived in South India in 2017, we could not get enough of this popular South Indian breakfast – the dosa. Traditionally made with fermented rice and urad dal, dosas are a thin crispy crepe with a slight tang. They usually come with freshly made coconut chutney and tomato sambar, a spicy soup. I replaced the rice for quinoa and the urad for mung bean to create this Ayurvedic Quinoa Mung Dosa. This dosa is more easily digestible by ALL body types than a traditional dosa.

Dosas in South India are a breakfast food, but you can enjoy this gluten-free, vegan dosa for breakfast, lunch or dinner! They are done in UNDER FIVE MINUTES! How amazing is that? We like to pair it with a pumpkin subzi and bell pepper chutney.
