We recently had a full harvest of plantains here on our land in Panama. This called for a fresh batch of my oil-free, Vegan Peanut Butter Plantain Bread! Fluffy, nutty, soft, and SO satisfying, especially with some ghee on top! Vata types can also enjoy this with a tahini and molasses drizzle. For Pitta types, opt for ghee or a strawberry jam!

Plantains are wonderful because they can be prepared in so many different ways. The green ones are less ripe and have a more starchy potato-like texture. The yellow/brown ones means the plantains have matured and are sweet. I love making banana bread, so I thought I would make my favorite banana bread recipe, except with plantains! But, you could also make this with bananas!

I know you will enjoy this recipe. It’s quick to make and sometimes, once it’s finished, quick to be GONE! I’ve made several versions, and this was the one I loved the most!

Plantains

When taken ripe and sweet, plantains are high in Earth and Fire energy and are especially beneficial to reduce an excessive Air energy (Vata dosha). They can reduce Pitta dosha but will increase Pitta energy in excess. Sweet plantains provide strength, increase fertility, and help to bulk up the blood. When green, plantains have more Air energy due to their astringent and dry taste. Green plantains are best for Pitta and Kapha types and reducing excess Fire energy, such as in diarrhea.

Peanut Butter

Peanuts are high in “Earth” and “Fire” energy. They are excellent foods to help ground and stabilize the body, increase fertility, improve immunity, reduce nervous tension, relax the mind, regularize the reproductive system, strengthen the bones, and stabilize hormones. They are a common allergen, however, and can cause digestion sensitivity in some. They are best taken soaked overnight.
