Take this Vegan Mexican Mole Sauce, for example. It is a savory, sweet sauce with origins on the Mayan Peninsula made from plantains, nuts, seeds, peppers, and sometimes more than 20 other ingredients!

A Mexican Mole sauce is a very complex sauce because it typically has many ingredients. However, to ease digestion (and save money on the grocery bill), I have created a simple Vegan Mexican Mole Sauce for you! It pairs so deliciously over savory vegetables with rice, in a taco, or as a side dip!

What makes a Mexican Mole Sauce so special is that it includes CHOCOLATE! It sounds a bit strange, but dark chocolate is bitter, so adding a little bit helps to balance out the sweetness of the other ingredients. For this recipe, I use raw cacao, which is very stimulating for the heart and circulation in its natural form.

This recipe is excellent for balancing Vata dosha! Vata dosha is balanced by natural sweetness. The plantains, almonds, and raisins all have a natural sweetness that helps to reduce pain, arthritis, anxiety, dryness, and constipation.

Some of the Ayurvedic energetics of the ingredients in this recipe include:

Almonds

Almonds are high in “Earth” energy. They are excellent foods to help ground and stabilize the body, increase fertility, improve immunity, reduce nervous tension, relax the mind, regularize the reproductive system, strengthen the bones, and stabilize hormones. They are best for pacifying Vata dosha.

Plantains

When taken ripe and sweet, plantains are high in Earth and Fire energy and are especially beneficial to reduce an excessive Air energy (Vata dosha). They can reduce Pitta dosha but will increase Pitta energy in excess. Plantains provide strength, increase fertility, and help to bulk up the blood. When slightly underripe, plantains have more Air energy due to their astringent and dry taste. Underripe plantains are best for Pitta and Kapha types and help to bind the stool.

Raisins

Raisins are high in Earth energy and Fire Energy. They are mostly sweet and can be a little sour. The drying process removes liquid from grapes, which produces raisins. When dry, raisins can be disturbing for Vata dosha and balancing for Pitta dosha. However, if rehydrated in water, ghee, or oil, raisins are excellent for pacifying Vata dosha. They help to reduce constipation, improve circulation, improve low blood pressure, and reduce nervous tension.
